May 2020 Baking Challenge: Mini Fruit Galettes (recipe coming tomorrow)
Since most of us are trying to stick to basic ingredients and aren’t frequenting grocery stores as often, I changed this month’s baking challenge recipe. Flexibility with both ingredients and preparation is ideal right now and that’s why we’re making mini fruit galettes this month! You can easily halve the recipe, use pretty much any fruit, serve for a Mother’s Day or Memorial Day treat, or enjoy as a weekend “just because!” treat. I have plenty of filling suggestions coming for you, too.

April Baking Challenge: Homemade Flatbread Pizza
During a particularly challenging and unpredictable month for us all, you took the April 2020 challenge and ran with it. Before the month started, I quickly switched the recipe so this challenge was more convenient to our circumstances. And we all (myself included) certainly enjoyed taking on the flatbread pizza baking project! Your toppings were creative, the flatbreads looked incredible, and many of you were pleasantly surprised with the recipe’s simplicity. I told you yeast doesn’t have to be scary. ?
You inspired me with all of your flatbread toppings! Two favorites included: (1) goat cheese, sautéed mushrooms, fresh arugula, and a drizzle of reduced balsamic and (2) homemade alfredo sauce, cooked chicken, sun-dried tomatoes, and fresh basil. YUM!
One of my favorite recipe reviews came from reader Megan:
“What a great recipe! This dough came together quickly and was very easy to work with. I didn’t need a rolling pin, and was able to shape the soft dough with just my hands. The added garlic and Italian seasoning in the dough pushed the taste over the top! I’ll definitely be making this again, especially if I’m short on time but still want something fresh and homemade. Wonderful as always, Sally!”
